About the course

This Level 1 Food Safety (Manufacturing) Training course is a ROSPA and CPD approved course designed to help learners understand how to minimise the level of potential hazards in a food handling setting.

Food Handlers and their employers have a legal duty to manage Food Safety. These obligations are set out by a number of EU and UK Laws. These Laws state that food handlers must make sure that food which is prepared, cooked, served or sold, is safe for human consumption. Failing to follow food safety standards can cause food to become contaminated with potentially fatal consequences.

Training your employees will provide greater awareness of the dangers that poor food safety standards pose, as well as covering how food safety risks actually arise and how to control and prevent them.

Aims of the course

This Level 1 Food Safety Training Course for Manufacturing aims to ensure those employees in a Manufacturing environment who are regularly involved in the handling and preparation of food, are fully informed about the risks and hazards involved in their role and the steps they may take to control and prevent contamination and risk.

1Food Safety Legislation

What is food safety and why does it matter? Laws and regulations covering the storage, sale and safe handling of food, hygiene standards, UK legislation, Food Safety Act (1990), local authority guidelines, corporate responsibility, liabilities and due diligence defence. HACCP principles, environmental health, premises hygiene standards, staff training, personal hygiene, construction, design and maintenance of the environment, cleaning programmes, waste disposal, pest control, supplier approval, cross contamination, reporting issues, food safety enforcement action.

2Hazards from Delivery to Service

How food safety risks arise, processing, packaging, delivering, serving and storing of foods, contamination hazards – physical, chemical, allergenic, biological. Micro-organisms, foodborne diseases, causes and symptoms, food poisoning sources, causes, symptoms and illnesses, the importance of good hygiene, food packaging and containment choices.

3Risk Control (Prevention of Contamination)

Control and prevention of food poisoning, spreading bacteria, temperature checks and controls, delivery, principles of safe storage, best before and use by dates, allergen risk, stock rotation, preservation methods, cold storage and refrigeration, temperature control, cooking, hot-holding and re-heating, food premises and equipment, waste management, pests, safe storage and use of chemicals, safe cleaning and disinfection.

4Pests, Premises and People

Managing, controlling and preventing pests (insects and rodents), daily cleanliness, ongoing maintenance and risk areas, internal and external premise maintenance, personal hygiene practices – specifics and examples.

Level 1 Food Safety (Manufacturing) Training Certificate
